Not going to lie: this one was a happy accident.
I was researching stuff for a completely different thing, and this came out of it.
This sauce is DBS's take on a Mexican Adobo sauce, with a few twists, obviously. We used Kumato tomatoes, a few peppers - Mulato, Chipotle, Chiltepin and cascabel to give it just a bit of a bite, and with just a touch of dark chocolate to round out the flavours this sauce just hit all the right notes. Strangely, the flavour kept changing.
